Hella Hearty Beef Stew

The weather’s getting cooler here in San Jose and I was getting a hankering for something hearty, simple and good. What’s better than beef stew? I didn’t really follow a single recipe, this was much of what I had laying around. I normally do a can of diced tomatoes or similar, but the stews always come out too thin for my taste. I wanted something thick without having to use any nut flours or other thickeners, hence the tomato paste. The results were fantastic, even my non-paleo, daughter gave it a thumbs up. Here’s what I did:

 

2lbs of grassfed stew meat
6 cloves of garlic, peeled and diced
2 medium onions (or more if you like)
1 large sweet potato, peeled and cubed
1 carton of beef broth (I used TJ’s)
Big handful of baby carrots and green beans (approx 1/2 lb each)
Small can of tomato paste (I used TJ’s)
Kellygold butter for sautéing
Salt and Pepper
Thyme

  • Take the meat out of the fridge for about an hour and sprinkle with salt and pepper
  • In a large skillet, using a pat of Kellygold, sear the meat in batches and put into a crock pot
  • Add more butter to the pan and add the garlic, onions, sweet potato and beens and cook for a few minutes to brown slightly.
  • Add everything to crockpot, saving any liquid in the pan
  • Add the tomato paste to the pan and stir over medium heat to mix with the butter and juices
  • Stir about half the broth to the pan and stir to combine and thicken
  • Pour the thickened broth/tomato paste mixture over everything in the crockpot
  • Pour the other half of the broth into the crockpot as well
  • Sprinkle some thyme on top
  • Cover and cook for 3 to 4 hours
The result was thick and hearty, just they way I like it. The meat was tender and flavorful. The broth was incredibly beefy without being too acidic or tomato-y.  The garlic and onions mellowed nicely and the other veggies added some nice sweetness and crunch. Wonderful.
I could have foregone all the pan browning and such, but I think it really added some flavor and helped add to the thickening process.
After freezing my butt off hanging up the lights outside, it was exactly what I needed to warm up.
